Wine Style

The Stewart Family pride themselves not only on their pioneering history, but also on their innovative nature. In the spirit of innovation, this year sees the inaugural release of our Gamay Nouveau named Cailleteau (pronounced kye-toe), after the French word for a baby quail. This wine pays homage to the French tradition where vineyard owners and workers of the Beaujolais wine region would celebrate the end of harvest with their “new wine”. As its name implies, it is the result of a quick winemaking process that allows for the grapes to be picked, fermented and bottled, all within a one-month time frame and then released on the third Thursday of November each year.


Tasting & Pairing

Expect a medium bodied, lively, fruity red wine. Vivid purple in color with typically bright cherry, kirsch and baking spice aromas and flavors. It is made in an easy drinking style with uplifting freshness and purity. The Cailleteau can be enjoyed on any occasion and we recommend serving lightly chilled to enjoy its youthful, fruit forward exuberance and character. We suggest pairing it alongside a charcuterie platter, sausages, burgers, patés, terrines, roasted chicken and soft cheeses. This wine is meant to be enjoyed young so we suggest it be drunk now and within the next 6 months. Santé!


Winemaking

The Cailleteau was made by using the carbonic maceration technique. This involves fermenting whole clusters of grapes in a carbon dioxide rich environment prior to crushing. By using this technique, the resulting wine is lively, fresh and fruity with relatively low tannin.
