Elizabeth Boyle, Pastry Sous Chef embodies these values through an unwavering dedication to using fresh, seasonal produce from the Okanagan Valley. By crafting dishes that highlight the peak flavours of each season, Elizabeth ensures that every bite is a delightful testament to the rich and diverse offerings of our local farms.

Since her early days spent in the kitchen with family, Elizabeth’s journey to Quails’ Gate Winery is fuelled by passion and inspiration. “I’ve always been interested in food. I have very fond memories of cooking with my mother when I was a child. We still enjoy cooking together, especially at Christmas,” reflects Elizabeth. Surrounded by beautiful produce grown in the valley and abundant fresh ingredients, Elizabeth developed a love and respect for the land.

Elizabeth’s culinary journey, like many, was not very straightforward. After pursuing culinary arts in high school, she went on to Vancouver Island University to finish her diploma in culinary arts and got her red seal shortly after. It wasn’t until later in her career that she discovered a true calling for pastry, dedicating the last five years to mastering the craft. The transition from general culinary arts to pastry has allowed her to merge diverse techniques and flavours, creating unique and memorable desserts.

These diverse experiences have significantly shaped her approach to pastry making. “Each one has shown me different skills and styles. I believe my pastry style is an amalgamation of all those experiences. My basic approach to dessert development is trying to find something nostalgic for the guest but showing it in a different way.”
